# Fermentation meets foodtech: where is the real bottleneck to scale?

Precision fermentation, biomass fermentation and cell-based approaches have moved from lab promise to real pilots. The science works. The harder question is what stops it from reaching industrial scale and competitive unit economics.

I’m Guido Mercati, Founder and CEO of PROTe-IN (www.prote-in.it), a deep-tech biotech startup, and Senior Advisor to deep-tech companies ([www.idrivemarkets.com](http://www.idrivemarkets.com)). I’d like to hear how people in this community see it:

- **Scale-up:** Is the main constraint bioreactor capacity, process yield, or downstream processing and purification?
- **Cost:** What has to happen on feedstock, energy and CAPEX to reach price parity with conventional ingredients?
- **Regulation:** Are novel food frameworks (EFSA, FDA, GCC and Asian markets) an accelerator or a brake in your experience?
- **Business model:** Do you see more value in owning the full product, or in ingredient, platform and CDMO plays?
- **Where AI helps:** Strain design, process optimisation, formulation, or something less obvious?

I’m especially interested in real-world lessons: what worked, what failed, what you’d do differently.
